It doesn't credit the author so I don't know if it comes from a recipe book or from the person who put it online: 1 cup of cashews, 2 cups of water, an inch or so of vanilla bean, pinch of Celtic sea salt, 1/2 cup coconut oil, blend, then agave to taste and add a touch of mint, blend. Finally add in some cacao nibs, put in an ice cream machine but it also worked without one OK. Freeze. Recipe is very loose by the way. You have mint chocolate chip ice cream better than any store type you can buy anywhere, and its raw! A note from me: I think this should work with carob, too, for those people (and me) who avoid chocolate.
