Guest guest Posted June 9, 2006 Report Share Posted June 9, 2006 We have been discussing stuff we can use to thicken ice cream but if you remember _real_ ice cream, when it thaws, it's rather watery. The premium ice creams don't use any additives at all to make them thick or " stabilize " them. If there is enough fat in the nuts called for in the recipe, the " mouth feel " should still be there. I'd say don't worry about thickness. And the fat doesn't seem to matter with frozen bananas...
