Dehydrating Question

Hi,

I'm another new person, have been lurking for a while but finally got

started and just completing day 4 of all vegan, mostly raw. Am not

cooking anything but have still eaten some processed foods such as

organic tortilla chips. I admit I haven't completely researched what

a " balanced " raw diet should be, having only read Living in the Raw so

far, which doesn't really address nutritional needs, but have ordered

Conscious Eating and will get started on it as soon as it arrives.

I've also browsed several websites. Too bad I hate sprouts, but am

forcing myself to eat them.

I'm quite shocked at how well I'm sticking to this so far. I've been a

vegetarian on and off for years, but never thought I could live without

cheese. Here I am, not really craving it even! At least not yet <g>.

I bought a dehydrator (Nesco American Harvester) a few months ago, but

never even took the plastic off until today. I definitely will need

some " snacks " so want to started using it. When reading the brochure

it says you need to " blanch " most all veggies first but I'm thinking

that may not be true for what we are striving for here? Would

appreciate feedback. Also, am assuming you can dehydrate potatoes to

make " potato chips " . Wouldn't they be very bland? Can you do anything

to give them some flavor? The farmer next to me handed me a bunch of

zucchinis today right after he picked them so I thought I might try

some of those also. Both raw and dehydrated.

Would appreciate tips. Thanks.

Susan,

I have found that I like to dry zucchini into zucchini chips and eat them with

guacamole. The first time I didn't get the dry enough to be crunchy, but that

is easily solved!

The longer I have been eating raw, the better bland foods taste. Really they

aren't bland any more to me. I haven't blanched any of the veggies before I

dried them, and the ones I have tried have turned out just fine. I do dip

apples in lemon before I dry them so that they don't turn brown. I think you

will need to do some thing similiar to potatoes before drying. With our garden

just starting to produce, I am excited about trying new things with the

dehydrator.

Susan, my dehydrator is like a torque wrench. It's nice to have it on

occasion but I don't use it often. I did try dehydrating potatoes

into " chips " and they were 'way too starchy. I sliced them with my

ChipShop and soaked them in water with lemon juice so you'd think

that would have done the trick but it didn't. I eat a raw potato once

in a blue moon. I can't remember the last time I had one. I mostly

eat juicy food that hasn't had the moisture taken out and I love it.

One book that is very readable and makes perfect sense is _Raw

Secrets_ by Frederic Patenaude. It's something I came across during

the first month of my being raw and I haven't looked back.
