Sweet Cucumber Salad Recipe

 

This light vinaigrette salad with just a dash of sugar is the perfect

accompaniment to sushi and other oriental fare.

 

We use Orient Express Cucumbers, crispy and bitter free peels make them

ideal for salads, but you can substitute your own favorite crispy cucumbers!

 

Sweet Orient Express Cucumber Salad

 

Ingredients:

2 Cucumbers Thinly sliced

1/8 cup Rice Wine Vinegar

1/4 cup Extra Virgin Olive Oil

1 Tbs Sugar

1 Tbs Soy Sauce

Fresh Ground Pepper (to taste)

Fresh Chopped Dill (as garnish)

 

Instructions:

 

Begin by thinly slicing 2 Orient Express cucumbers

 

Place sliced cucumbers in a bowl

 

Add in:

Rice Wine Vinegar

Extra Virgin Olive Oil

Sugar

Soy Sauce

Fresh Ground Pepper (to taste)

 

Stir thoroughly to coat cucumbers.

 

Garnish with fresh chopped dill.

 

Allow the salad to marinate an hour or more before serving.

Obviously I didn't get this recipe from a raw site!! I should have changed

" sugar " to " agave nectar " and " soy sauce " to " Braggs " -- though, I assumed

everyone could make amendments as they saw fit! hahaha
