The take the sap and cook it at 190 degrees F for 3 days, roughly 72 hours, to evaporate enough water to make a commercially viable product. What an ecological waste! The sap from the tree is almost entirely water. So you might try contacting a small producer, see whether they might be wiling to send you some of the sap. No idea how it would taste. Otherwise, no, maple syrup is cooked, a lot.
