Message snipped for benefit of digest readers. ___________ Hi there, Soy was chosen years ago as meat substitute/extender for use in commercial hamburgers and other meat-related products, because it's protein more closely resembles that in meat than any other commercially viable vegetable food. Specifically, soy protein is very high in sulfur. In any processed form, soy is very acid-forming in the body and therefore health-diminishing. Regarding raw dairy, yes, I am familiar with Organic Pastures, yes, their products are absolutely outstanding, yes, it's (all dairy is) loaded with fat and with casein, a protein so dense it is used as wallpaper paste. Not made INTO wallpaper paste ... used AS wallpaper paste. The protein content of cow's milk is at least 300% that of human mother's milk, and the protein is much denser. This protein is well designed to fuel growth from a 60-lb. calf to a 400-lb. cow in a year, give or take. Then there is the issue of weaning. We are the ONLY species on Earth of which I am aware that continues to consume milk and related products post-weaning. What most do not realize is that mother's milk in EVERY mammal species contains certain very mildly addictive chemical compounds. These are place there by Nature to encourage the baby to nurse to full term before weaning. The concentration of these substances in cow's milk is considerably higher than in human mother's milk. Ergo, many people find dairy one of THE most difficult food " groups " from which to graduate. Perhaps time to graduate?
