Hi Leslee..

 

Consider that corn is not a " vegetable " , really, it's a grain.

Most grains such as corn, wheat, oats, barley are seeds of various

types of grasses. Humans are not really designed to digest grains.

 

And yes, I'd say that raw might digest better than cooked (as is the

case with many foods, since the body has to expend less energy

" digesting " raw foods, especially fruits.)

 

Note that some people like to eat corn as soon as it is picked in the

fields; I've seen data that says that the carbohyrate in corn, is

converted to starch (stored plant sugar) within two hours of being

picked. Years ago, when I lived on a small farm in NC, and then up

in NJ, fresh picked corn eaten immediately as it was picked, was a

delicacy. I've never tasted any corn that wasn't just picked that has

that same taste!

 

As far as cooked corn showing up " whole/undigested " when you see it

for the 2nd time, yes, that's been my experience also, and I think

serves as a good reminder that any foods that we see coming out whole,

have done us no good - the body just didn't do anything with them.
