I was going to make hummus. Should I have just bought the canned kind? And does anyone have a kick-ass hummus recipe I could try? Thank you! Guest guest Posted August 23, 2006 Report Share Posted August 23, 2006 Why do you dry them? I soak overnight, rinse and put in a colander and rinse 3 - 4 times through the day. I only let them sprout until the tail is 1/2 as long as the bean is round. Any longer they get a " funky " taste to them. And I use any hummus recipe that calls for cans, I just substitute sprouted beans. Make sure your tahini is raw, though. After soaking, rinsing and draining I usually rinse and drain 2-3 times per day and allow to sprout (2 days) only until the tail is about 1/4 " (according to Victoria Boutenko). When processing I may add Young Thai Coconut Meat to help smooth out. Try this especially if you're trying to cut back on too much oil per day. I also add various fresh herbs and/or veggies (i.e. parsley, dill, cilantro, chives, spring onions, finely ground carrots, and of course some spicey pepper (optional).
