My neighbor said if I leave them in too long, they'll get too tough, and otherwise you have to be careful because they'll mold. Also, on the hummus -- I've made hummus w/sprouted garbanzos 4 or 5 times and everytime it has turned out tasting rotten. I have followed regular and " raw " hummus recipes and nothing has seemed to come out well at all. I went to a restaurant and they served excellent raw almond hummus. The garbanzos have a little skin on them that sort of comes off after soaking -- does anyone here remove all the skins? Thanks! Guest guest Posted August 24, 2006 Report Share Posted August 24, 2006 I've only made hummus a couple of times, but it tasted fine. What stage are your sprouted garbanzos in when you make it? I like them to have just a little sprout (no longer than the bean itself). Also, make sure that you're draining and rinsing them thoroughly - if you don't, the beans may go moldy. If you sample one, it should taste pleasant and a little 'salady'. If you're transitioning and want to make hummus that's a lot like cooked hummus, you may want to add a good swig of olive oil and a clove of garlic, as well as raw tahini, lots of lemon juice and maybe some fresh parsley or coriander.
