young coconut recipes (was I found them!!!! Now what do I do with them?)

Hi Donna anne,

 

Not sure what types of ideas you're looking for...I just made a

yummy new treat today w/young coconut:

 

Dreamsicle Shake (from Michelle Reeves, www.fromsadtoraw, with a

little modification)

 

1/2 the meat and water from young Thai coconut

2-3 frozen bananas (add to desired thickness)

4 dates

juice of 4 oranges

 

blend dates w/a little water. add coconut water and meat and

blend. add o.j. and frozen bananas to desired thickness. i made

mine not too thick and it was kind of like an orange julius.

remember those? michelle's recipe also called for honey, vanilla,

and ice, but i liked mine a lot and it was simpler!

 

I also like this Carob Shake I got from Audrey Walker

(www.rawhealing.com):

 

2-3 frozen bananas

2 Tb. raw carob powder

1/2 or all the meat & water from young coconut

1-2 Tb. almond butter or handful almonds (optional)

water to blend if necessary
