I usually grind up sweet potato in my food processor and include

it in salads with other things that I have also food processed into

smithereens, like beets and carrots and kale.

I was just trying to figure out what to do with spiralized sweet

potato " noodles " . I ended up marinating overnight with the spiralized

beets. My goal was to get something soft and easy to chew. It was

still pretty crunchy. I guess I won't be doing sweet potato " noodles "

again any time soon.
