What are some meals that can be prepared in advance for a few days?

Hi,

 

I'm trying to think of some recipes that keep well in tupperware for a

few days - ones that won't get soggy, etc. I'm having the hardest

time, because most raw meals need to be fresh! Can anyone help me?

 

P.S. - I know dehydrated patties work well, but I don't have a

dehydrator so they're not an option for me.

I have made several of the " salads " from Judy Cozza's website and found that

they lasted a couple of days in the fridge. For instance the red lentils, corn

casserole and the broccoli salad...

I would think some grain or bean salads would keep for a few days.

Also fermented dishes like raw slaw or kimchee. There are some marinated

vegetable salads I have had that taste better after a few days.

 

Also some things, like raw hummus and pate, can be frozen for a short time.

From " Warming Up to Living Foods " , there is a good recipe that has

curried cauliflower, red bell peppers and a few other

veggies/seasonings. She, obviously, calls to " warm " it up, but it's

great cold, too.

 

I also love the Pad Thai from Raw Food Real World, and have had

great success traveling with that and keeping it for several days.

Pesto keeps very well!

Basil, garlic, olive oil, salt and any kind of ground nuts you want

or sunflower or pumpkin seeds soaked or unsoaked all work

well.

Serve on tomato slices (romas work well) or with carrot sticks or

carrot " chips " (slice large carrots diagonally into rounds)

*~ Any of the hearty veggies are going to last at least three days

if not 5. You can pair green salads with different pates to change

up your meals, sometimes you may not even require an additional

dressing - just mix the pate in w/ your greens. I love the

following recipes:

Also you can chop red cabbage and lots of fresh parsley into a bowl

and put a dressing of olive oil, lemon juice, and celtic salt. Make

the dressing so that your mouth puckers from the lemon and salt.

Then pour it over the cabbage and parsley and let sit for about an

hour. The flavors meld nicely and it looks really pretty -

especially if you add a lot of parsley.

 

Additionally, I have noticed that any tomatoe sauces I make

containing sundried tomatoes last at least 5 days, sometimes 7 or

more if its a marinara with no fresh tomatoes.
