Intro and Question about Coconut Milk

Hi

I've been a vegan/no sugar for about 2 years now and would like to go 50% raw.

I like to use frozen bananas with cocnut milk for " ice cream. " I have been using

canned coconut milk which I'm sure isn't very healthy. I have never found young

coconuts in my area, and when I do buy coconuts, I find that the effort is

simply too great, and it's not worth it. The milk isn't nice and thick and

creamy like in the can. I'd like to know if there are any fresher alternative to

coconut milk (aside from the actual coconut.)

Is there a source in the US for the " milk " ? She doesn't ship

foodstuffs outside the UK.

I just saw 100% coconut water at my local food co-op in the

refrigerated section in small containers w/all the water, soda, milk

(convenience beverages). That might be better than the canned--not

sure. Sorry, didn't get the brand!

Coconut milk and coconut water are pretty much the same thing. The first time I

opened a coconut I was expecting " milk " as well, but all that came out was sweet

water.

 

If you want something more milky, try going to http://www.thenaughtyvegan.com/

This is Jeff Roger's site and he wrote a book called " Vice Cream " . An

alternative to ice cream. In this book he has a recipe for making coconut

" milk " . If I remember correctly it involves young and aged coconuts, a blender,

and a juicer. Quite time consuming, but very worth it, especially if you make

the Vice Cream when you're done!

tried that site of the " naughty vegan " but couldn't really find a list of the

ingredients that are used in the " ice cream like " desert.

From my experience:

 

Coconut water is the water you get from green coconuts. It is chilled

becomes a nice refreshing drink. Real good when the place is hot!!

 

Coconut milk is referred to the process of grating old husky coconuts

and soaking it in water. It is strained and the " milky-water' can be

used when cooking cook-up rice, curried beans, etc.

One of the advantages of owning " vintage " raw food books is that

there are recipes from the days when all of the lovely " new " products

had not yet been made available to us.

So it is with coconut milk:

In the 70s, there were no " young Thai coconuts " , so coconut milk

recipes were somewhat different from those we see today:

 

from Ann Wigmore's Recipes for Longer Life

COCONUT MILK

1 coconut

2-4 T coconut oil

spring water as needed

 

Open the coconut, pour out the " water " and save. Chip the meat away

from the shell and skin. Pour the " water " into the blender, and

gradually add in the bits of coconut meat. Keep on adding them in

until you have a milk-like consistency. Make as much as you need,

adding more spring water and oil to keep the texture milk-like.

 

You can make a rich, delicious fruit salad sauce by blending in more

coconut meats and less spring water. Use it as a base for other fruit

sacuces; add it inot hte fruit smoothies following. With less

liquid, it makes a great topping, in place of cream.

 

For a less pulpy texture, pour the liquid through a sieve to strain

out pulp, or squeeze through a cloth.
