It is not as sweet as dates, and helps hold the bars together. Sometimes I use a small jar of organic baby food, like pears, to flavor the bars, but of course then they are not entirely raw. Mashed banana also works well Brenda I used to use agave nectar until I discovered that it is hard to find really raw agave nectar. Even when the label says it's raw, it's not.
