They are soft and creamy, and delicious by themselves or great in smoothies. I use it fresh and open them by cutting the husk off the top (pointy end) and then sawing in the same spot on the side until I can get the tip of my knife in. I drain the water and then twist my knife to split it all the way around. I then scoop out the " meat " with a spoon. They are so delicious! I go through about 8/week. It was kinda hard to get into, but not as hard I'm sure as the other ones I have sitting on my counter. I called a local Thai restaurant and described these to someone there and he said that these are Thai coconuts, but I'm not sure if I really described it right. Has the outer shell been removed or is this the way they grow naturally?
