TOPS Hugs, Janice from Ohio (KOPS) WHIPPED CREAM 1 cup of cashews 1/2 cup of water Blend that in Vitamix. Janee said if you don't have a Vitamix that make sure you soak the cashews overnight and then you can use the food processor. Once it's creamy Add: 3 dates, 1/2 teaspoon of vanilla extract and she said something about an orange zest but make sure oranges are organic. Didn't catch how much of that. Probably just a little bit of the zest. Janee didn't have this recipe typed up for us. Janee just told us about this recipe. Janee had a raw food restaurant at one time. Guest guest Posted November 19, 2006 Report Share Posted November 19, 2006 Give you a little hint, it works better to puree the dates and water first and then add the soaked cashews and it might take a little more water. We've been making this " fluff " for eons and it is much easier to get fluffy and light if you do it in reverse. Dates & water, then cashews and vanilla can go in any time.
