I found it on Ann Wigmore site about this and don't understand it all. do you use the water from the wheat berries in your green drink or what? I attended a lecture by Dr. Brian Clement the director of the Hippocrates Inst (Wigmore's place). I asked him this very question. he responded that they have found it isn't a particularly good thing to do for various reasons and haven't done or advocated it in over 25 years. I too went to a lecture by Brian and he mentioned the varied " instability " of rejuvelac from the time it's ready to consume that led to their decision. I used to make it and had fun doing so but the " prime-time " to drink it " taste-wise " would vary immediately from the time one " deems " it ready. Having not consumed alcohol for 17year, 10months, I was always very cautious about the idea of " fermenting " anything to drink, such as the " mushroom " item -- the name escapes me now. With all due respect, I have made and used rejuvelac off and on for maybe 25 years... I have been careless and careful in the making... I have always used very clean jars to make it, and I have never had it go bad... I have read that, if you think it smells funny, you should throw it out, but I have never had that experience. I did have one batch go over, but that was because I left it in the refrigerator for about 3 weeks. Wigmore highly touted the stuff. I think that, since her death, a lot of her ideas have been tossed. There are still many people who believe in rejuvelac -- I figure that, if it was good for me before, it hasn't changed, regardless of the attitudes of her successors. I do use vinegar, in my personal food preparation, and I find that rejuvelac continues to be a healthy inclusion in my diet. Following a food preparation training with Lillian Butler, who trained at Hippocrates, I have begun to experiment with " rejuvelac wines " , i.e., flavored rejuvelac. The only " bad " effect I have had is that I go through a heck of a lot of my flavored rejuvelac... it is good stuff! The recipes I use are in the list files, for those who would like to continue using rejuvelac and would like some variations. It was before I remodeled the kitchen and I think mold was present in the area I was fermenting the brew.
