For that reasonI have been looking for a new dehydrator company. I found the Living Food Dehydrator. Has anyone seen these? What do you think? The thermostat maintains the temperature and shuts the unit off at the end of the set time cycle. 110 volt, 60 Hz. # Available: 80 Liter Around $300 # 160 Liter Around #400 Exterior measures: # 80 liter - 22-1/2 " T X 20-1/2 " D X 24 " W # 160 liter - 36-1/2 " T X 20-1/2 " D X 24 " W In comparison the largest non comercial excalaber is around $220- $250 made of plastic (with teenage boys plastic gets nocked off of counters and things get broken) The other real choice for such a large one it the kit that you mentioned which even though I have never used a wooden one, I have used a wooden chopping block and flavors get trapped in and you can not clean it all out with out putting some other chimical into your mouth. Also prolonged use of wood products with moisture tend to expand and contract until they crack. With those things in mind the best for me for doing large amounts (I have a family of 5) without being totaly outragious is the Cabela's above at www.cabelas.com go to food & food prep and then to dehydrators.
