Guest guest Posted February 1, 2007 Report Share Posted February 1, 2007 Although vegetables have very little fat and protein (which most people already have more than enough of in their diet) it is an EXTREMELY balanced food in other ways. It is a great source of complex carbohydrates, fiber, vitamins, and minerals. One other good reason to consume vegetables is because of the amino acid content, without which, proteins are turned in to carbohydrates and fats instead of muscle.
