Guest guest Posted February 6, 2007 Report Share Posted February 6, 2007 Aloha a few years ago a friend and I were loving the super sweet corn and discovered that it's really very messed with..... hybridized and GMO So be careful with eating so much of that corn - outta season... espcially the super sweet corn I actually developed a corn allergy during that time (1991) Even tho it's yummy. Guest guest Posted February 7, 2007 Report Share Posted February 7, 2007 I can't speak for the commercial companies, but growing up on the farm we didn't pre-cook or blanch veggies or fruit before freezing except green beans and asparagus. Everything else just got washed, chopped and bagged. Even now, I don't blanch (even green beans and asparagus or okra). As for corn, we pick it in the fall and I don't bag or foil it. Just toss it in a box in the freezer w/the husks on. Yep, by the time fall rolls around, I'm all about EASY..... Perhaps a phone call to the company? I e-mailed Cascadian Farm and they told me all their veggeis are flash-boiled to kill enzymes that lead to deterioration of the vegetable. Guest guest Posted February 7, 2007 Report Share Posted February 7, 2007 Yes, a friend of mine contacted 2 or 3 organic frozen corn and peas companies and found out that yes, they heat/pasteurize them before freezing them!!! The fruit on the other hand they do not mess with. I'm not sure why...maybe to give the corn and peas a softer texture??? But this may not be the case for every company...you'd have to check! Still even if it's cooked, it's a better choice than let's say corn chips if that's what you are craving for instance! I have seen frozen corn come through the other " end " whole, whereas fresh corn doesn't seem to do that! Anyone else have that experience??? I think cooked corn is just not digestable, so any value in eating it for me would only be to squash a craving...I should remember that next time I crave corn chips, I've fallen off the wagon recently when I smelled my kids' corn chips and eaten a couple of handfuls! That's all it takes to make me feel sick...yuk! Once when I was craving corn chips, I had a bowl of thawed frozen corn with salt sprinkled on it -I know, not the healthiest food- but it helped with the craving! the problem is that my kids love frozen corn so much, if I buy any to have around for those cravings, it dissapears...the corn that is, not the craving...they love it so much! They could each eat 2 or 3 bags of thawed frozen corn a day if I let them!!! What's up with that???
