I solved the prob by making homemade raw corn chips! I cut the raw corn off the cob, add a little natural sea salt and a squeeze of fresh lime, whirl it all in my magic bullet blender (I should think a regular blender or food processor would work) I like to leave it a little on the chunky side. I then put the paste in a ziplock bag, cut off a small corner of it, and pipe the mix onto the teflex tray of my food dehydrator, and dehydrate until its nice and crunchy. They are yummy! I agree with Elchanan about if you have to refine something, but I am about 80 percent raw at this point, and not quite ready to give up some crunchy snacks. I hope this helps. By the way, I use the leftover corn husks as a base for vegetable stock-I just throw them in the pot with whatever other veggie trimming I have around, simmer for about 1 hour with fresh herbs, seasonings, etc. Brenda Quote Link to comment Share on other sites More sharing options...
Guest guest Posted February 9, 2007 Report Share Posted February 9, 2007 I also loved my crunchy foods, now I eat celery when I want the crunch or roll some leafy somethings around bits of tomato or salsa (made w/herbs not onions & stuff) The reason I wrote was to encourage that as you begin to change from dehydrating, you might like to try something that I did for " chips " -- take a pair of kitchen sissors and cut leaves of red cabbage into triangles and make a BIG bowl of them to dip and munch and swipe through whatever salsa/zucchini hummus/or other dip - you might come up with. Happy munching! Oh these also made a good batch of nachos which my non-RF friends LOVED & couldn't get enough of, when I used nuts to make a mock cheese and used sunflower seeds to make a mock ground meat.
