Guest guest Posted March 2, 2007 Report Share Posted March 2, 2007 Ok, so I tried making raw spaghetti sauce for the first time today and it turned out DISGUSTING! No one would eat it so we ended up going out and getting something (not raw of course ). Anyway, is there any way to fix it? Any and all suggestions would be great. Here's what's currently in this horrible concoction: 2 large tomatoes 1 celery stalk (my bf HATES celery and says this is all he tastes) 2 cloves garlic (this is VERY strong and this is all I taste) 1/2 med onion 1 can diced tomatoes (not raw, but at that point I was desperate!) Salt, Pepper, Ground Thyme, Basil, Rosemary It is bland, the garlic is overpowering, and completely gross. What are your suggestions to either fix the sauce or suggestions on how to use it in another way. Thanks! Jenn P.S. I just ordered my first dehydrator and large food processor and they're on the way. Guest guest Posted March 2, 2007 Report Share Posted March 2, 2007 Hi Jenn - I'm not going to be much help here, but wanted to tell you that with every recipe that I have tried that calls for garlic - it is totally overpowering and pretty much wrecks it for me too. I don't know if raw people just get used to it or what, but I sure haven't. So, now if a recipe calls for 3 cloves, then I might just put in 1, or skip it entirely. I don't like onions or peppers either, which could be a reason why my stuff turns out weird, but I have tried putting them in and all I can say is YUCK!!!!!!!!!!! But then I guess the recipe doesn't have quite the same ratio of liquid or something if I don't put them in. Hopefully a more experienced person will have some pearls of wisdom for us here. So far the only thing I have had much luck (for myself, not my kids of course) are salads. Hopefully it will get better for both of us. Hang in there and good luck! Oh, yes! I tried that recipe and it was awful! This is why they say always try recipes in small amounts first. My best sauce starts with equal amounts of soaked sundried tomatoes and fresh tomato and some pine nuts. I make a garlic oil by putting a couple of cloves in a bottle of olive oil, so a tablespoons per serving of that goes in. I spice it up -- oregano, sea salt, pepper, pinch or two of cayenne. I like to top the dish with ground walnut -- gives it a creamy, meaty flavor. I use the spiral cutter on yellow squash or zucchini for the pasta. Basicly it was a thinner watered down version of your sauce. Anyways, maybe 1/2 or even a 1/4 of a clove of garlic would be enough because it is so strong when raw. Another thing we sometimes love about tomato sauce is the slight sweetness (cooked or roasted fruits and veggies become sweet), so I recommend red pepper or perhaps (and I have never tried this) purred carrot because they are perfectly sweet in there raw form. As for your current leftovers and we have all done this, you could reuse them later. I just froze my little Disaster into portions and then used them as fillers in other recipes. As long as the recipe later was large enough, I could not taste the Once Disaster. That way you already know that you are fairly likely to like the taste. I've gotten a lot of suggestions for putting stuff like peppers and carrots in it to sweeten it up. Of course, my bf happens to hate them and will not eat it! What about it I put a teaspoon of agave in it instead? Do you think it would taste even more disgusting?! I have a couple of avocados at home. I'll try adding it to the sauce tonight. Blend together (can be regular old cheapo blender) 3 organic plum tomatoes 2 organic regular tomatoes 8 or so organic unsalted soaked sundried tomaotes including the 1/2 cup soak water 3-4 inches of chives, they cut up easily with kitchen sissors 2-3 leaves of basil 1/2 - 1 red pepper (gives the sauce a beautiful red color) OPTIONAL: Sweater sauce add 2 organic fresh dates, New to RAW and transitioning from meat add a few (4-5) kalamata olives (packed in water is best or soak a couple hours to get salt out) Serve over Zucchini or a combination Zucchini/Cucumber angelhair " pasta " which I put through the Saladachio thing. This works GREAT for me.... of course if you are still using other ingredients trial and error happen, just have fun playing with your food...the results can only be so bad. Oh, I almost forgot - I found that aiming to keep both the number of ingredients and the combinations as simple as possible (between 3 and 5 ingredients) really makes a BIG difference. Take what you need and leave the rest. Simply, Lesa PS. Celery is great in blended tomato soup - in my opinion, not in 'pasta' sauce. For a good blended celery/tomato soup -- 1 1/2-2 tomatoes, 2 stalks celery and 1 tangerine blended.
