This creative Mother's Day Melange features a variety of fresh spring stir-fry veggies. Broccoli, carrots, snow peas, mushrooms, and red bell peppers are covered in a creamy, lemongrass ginger sauce for a flavor combination that will energize the whole family. Ingredients: 1 clove garlic, chopped 2 cups fresh lemongrass 2 large pieces of fresh ginger 4 cups plain soymilk or coconut milk 2 Tbs. cornstarch + 2 Tbs. water 1 tsp. salt 2 cups shiitake mushrooms 1 1/2 cups red bell pepper 1 1/2 cup carrots 1 cup daikon 1 cup broccoli 1 cup snow peas 3 Tbs. peanut oil Directions: Lemongrass Ginger Sauce: Place the lemongrass and ginger pieces on a firm surface area and press on them firmly with the back of the frying pan until thoroughly smashed. Heat 1 Tbs. peanut oil in a saucepot and fry lemongrass and ginger for a few minutes. Add soymilk and bring to a boil, then turn down the heat and simmer for 30 mins. Strain the pieces of lemongrass and ginger out of the mixture and bring to a boil again. Place cornstarch in a small bowl and add water while whisking until smooth; slowly add to the boiling sauce, constantly whisking to keep the sauce smooth; simmer 10 more mins. Stir-Fry Veggies: Heat 2 Tbs. peanut oil in a skillet; add carrots, snow peas, broccoli and garlic and cook over medium heat until tender (about 10 mins). Add shiitake mushrooms, bell pepper, daikon, salt and cook for another minute; stir until everything is mixed and add 1 cup (or more) of Lemongrass Ginger Sauce. Bring mixture to a boil; sprinkle with sesame seeds if desired and serve over brown rice.
