Recipe: Mother's Day Melange

There's no better way to show Mom your appreciation than to prepare her a

deliciously healthy, home-cooked meal. This creative Mother's Day Melange

features a variety of fresh spring stir-fry veggies. Broccoli, carrots, snow

peas, mushrooms, and red bell peppers are covered in a creamy, lemongrass

ginger sauce for a flavor combination that will energize the whole family.

Ingredients:

1 clove garlic, chopped

2 cups fresh lemongrass

2 large pieces of fresh ginger

4 cups plain soymilk or coconut milk

2 Tbs. cornstarch + 2 Tbs. water

1 tsp. salt

2 cups shiitake mushrooms

1 1/2 cups red bell pepper

1 1/2 cup carrots

1 cup daikon

1 cup broccoli

1 cup snow peas

3 Tbs. peanut oil

Directions:

Lemongrass Ginger Sauce:

Place the lemongrass and ginger pieces on a firm surface area and press on them

firmly with the back of the frying pan until thoroughly smashed.

Heat 1 Tbs. peanut oil in a saucepot and fry lemongrass and ginger for a few

minutes.

Add soymilk and bring to a boil, then turn down the heat and simmer for 30 mins.

Strain the pieces of lemongrass and ginger out of the mixture and bring to a

boil again.

Place cornstarch in a small bowl and add water while whisking until smooth;

slowly add to the boiling sauce, constantly whisking to keep the sauce smooth;

simmer 10 more mins.

Stir-Fry Veggies:

Heat 2 Tbs. peanut oil in a skillet; add carrots, snow peas, broccoli and garlic

and cook over medium heat until tender (about 10 mins).

Add shiitake mushrooms, bell pepper, daikon, salt and cook for another minute;

stir until everything is mixed and add 1 cup (or more) of Lemongrass Ginger

Sauce.

Bring mixture to a boil; sprinkle with sesame seeds if desired and serve over

brown rice.

Health: Veg Moms & Healthy Kids

Parents who encourage their children to eat wholesome, healthy meals early will

have a positive impact on them in the future, affecting health, weight, and

need for medical treatments. Vegetables, grains, fruits, legumes, and nuts are

the optimal foods for children. Rich in complex carbohydrates, protein, fiber,

vitamins, and minerals, they form the foundation for dietary habits that

support a lifetime of health.

Pediatric development tests in vegetarian children indicated mental age advanced

over a year beyond chronological age, and mean IQ was well above average at 116

points. Additionally, researchers have discovered that adults who consume

fruits and vegetables are those who consumed these foods during childhood. More

recent research reveals that the strongest predictor of consumption of fruits

and vegetables in children is the behavior and attitude of the parents.
