Aloo Gobi, a traditional Indian recipe, features potatoes and tender cauliflower florets seasoned with zesty spices. Cauliflower, with a naturally mildly sweet flavor, makes a terrific addition to many meals. Versatile in the kitchen, it can be steamed, baked, sautéed, or even grilled. Even raw florets make a crunchy, nutritious appetizer with your favorite dip. Cauliflower is also high in essential nutrients, such as vitamin C, folate, and fiber, and has been found to have cancer-fighting compounds. Ingredients: 3 Tbs. vegetable oil 1/4 tsp. mustard seed 1/4 tsp. cumin seeds 1/4 tsp. ground turmeric 1 Tbs. curry powder 1 hot green pepper, split down its length (optional) 3 roma (plum) tomatoes, chopped 2 Tbs. fresh ginger root, minced 1 potato, cubed 1 head cauliflower, broken into small florets 1/2 tsp. sugar salt (to taste) Directions: Heat oil over a medium-high heat. Toss in mustard seeds; when they are heated, add cumin seeds, turmeric, curry and hot pepper. Add chopped tomatoes and ginger; stir and sauté for a few minutes. Add potato, cauliflower florets, sugar and salt. Stir well and cook until potatoes are cooked and cauliflower is tender yet crunchy.
