Prior studies have suggested that the antioxidant potential of dietary carotenoids may protect against the oxidative damage that can result in inflammation. The study of more than 25,000 subjects revealed that people who had an increased daily intake of beta-cryptoxanthin were less likely to develop inflammatory disorders. According to the researchers, a modest increase, equivalent to one glass of freshly squeezed orange juice per day, of this vitamin is sufficient to reduce risk.
