Recipe: Spicy Citrus Thai Salad

 

HereÂ’s a simple salad thatÂ’s packed with flavor and nutrients. With a

delectable spicy citrus dressing, complete with garlic, ginger, and

fresh-squeezed orange juice, this salad has a tasty Thai flair. Orange

juice, high in vitamin C and other essential nutrients, can make a great

addition to dressings, dips, and stir-fry sauces. Try this salad as a

healthy, light lunch or a dinner starter.

 

Ingredients:

 

1/2 cup orange juice, fresh-squeezed

1/2 cup lime juice, fresh-squeezed

2 tsp. soy sauce

ground pepper (to taste)

1 Tbs. chilies (such as serrano, jalapeño, etc.), minced

2 tsp. garlic, minced

1 tsp. ginger, minced

3 Tbs. vegetable oil

1 head romaine lettuce, torn into bite-sized pieces

1 tomato, chopped into bite-sized chunks

1 large cucumber, peeled and cut into rounds

4 green onions, thin-sliced

1/3 cup coarsely chopped fresh cilantro leaves

 

Directions:

 

In a jar with a lid, combine orange juice, lime juice, soy sauce, and

pepper; shake well.

Add chilies, garlic, ginger, and oil; shake well.

In a large bowl, combine the remaining salad ingredients and mix well to

combine.

Drizzle on about ½ cup of the dressing, toss well and serve immediately.

Book: Claude & Medea Bring Message

Looking for a fun, pro-vegetarian book to share with the family? " Claude

and Medea Book 1: The Hellburn Dogs " is the first in a childrenÂ’s series

(ages 9 and up) and confronts important issues, such as diet and

vivisection. Written by Zoe Weil, this book revolves around two 7th

graders at a Manhattan school, who through the influence of an eccentric

substitute teacher, become clandestine activists seeking out opportunities

to right wrongs and do good in the world.

Health: Citrus Reduces Arthritis Risk

 

According to a study published in the American Journal of Clinical

Nutrition, increasing the intake of essential vitamins found in citrus

fruits may reduce the risk of developing inflammatory disorders, such as

rheumatoid arthritis. Prior studies have suggested that the antioxidant

potential of dietary carotenoids may protect against the oxidative damage

that can result in inflammation.

 

The study of more than 25,000 subjects revealed that people who had an

increased daily intake of beta-cryptoxanthin were less likely to develop

inflammatory disorders. According to the researchers, a modest increase,

equivalent to one glass of freshly squeezed orange juice per day, of this

vitamin is sufficient to reduce risk.

Inspiration: Youthful Activism

 

Lydia Fasske is a 17 year-old student at Cascade High School in

Leavenworth, WA. Environmentally and socially conscious, she takes a stand

for her beliefs and works toward educating her fellow students about the

impacts of a meat-based diet and global warming.
