This gazpacho is " fire and ice, " spicy hot, yet cool at the same time. Watermelon is a good source of vitamin C; just one cup contains almost 25 percent of the daily recommended value. It also provides vitamins A, B1, B6, potassium, and magnesium. The vibrant red color of watermelon indicates its high lycopene content, which has been studied for its antioxidant and cancer prevention properties. Remember -- fruits and vegetables are the only source of fiber, so enjoy them! Ingredients: 12 lb. watermelon, seeded 2 oz. fresh lime juice 2 each fresh chili, chopped 4 cloves garlic, minced 2 oz. fresh mint, minced 1 1/2 lbs. zucchini, diced 1 lb. bell pepper Directions: In a blender, purée the melon (without rind) until smooth and pour into a large bowl. Return 8 oz. of purée to blender and add lime juice, chili, and garlic; blend until smooth. Add to large bowl and mix. Slowly add mint, zucchini, and pepper, and mix to combine. Refrigerate for at least an hour and serve chilled.
