This recipe will show you how quick and easy great taste can be. Panini, classic Italian grilled sandwiches, are simple to make and bursting with flavor. Succulent grilled summer veggies, such as yellow squash, zucchini, and peppers, make these thin sandwiches ideal for a light summer lunch. Try this recipe with veggie focaccia, flat Italian bread topped with spices, or whole wheat pita. Ingredients: 2 zucchini, grilled 2 summer squash, grilled 1 green or red pepper, grilled 1 orange or yellow pepper, grilled 1 loaf of focaccia or other bread of your choice marinade of your choice (sesame, ginger, etc.) 1 - 14 oz. can artichoke hearts, cut into quarters Directions: Coat slices of zucchini, summer squash, and pepper with marinade and place on grill. If desired, grill the slices of bread lightly on each side. For each sandwich: spread some additional marinade on cut side of two slices of bread. On one piece of bread, layer a few pieces of each grilled vegetable, a few pieces of artichoke hearts, and top with another slice of bread. Repeat procedure for remaining sandwiches and cut each sandwich in half before serving. Learn more about it at www.VRG.org! _____________________ Health: Vegan Diet Helps Diabetes A new study appearing in the August issue of Diabetes Care shows that a low-fat vegan diet treats type 2 diabetes more effectively than a standard diabetes diet and may be more effective than single-agent therapy with oral diabetes drugs. The randomized controlled trial was conducted by doctors and dietitians from the Physicians Committee for Responsible Medicine (PCRM), George Washington University, and the University of Toronto. The study involved 99 individuals with type 2 diabetes. Half the group was assigned to follow a low-fat vegan diet for 22 weeks, and the other half was asked to follow a diet based on the American Diabetes Association's guidelines. While both groups experienced significant reductions in all categories, the vegan group experienced significantly greater reductions in blood sugar levels, weight, body mass index, waist circumference, total cholesterol, and LDL cholesterol.
