Recipe: Creamy Chocolate Cheesecake

 

Feel better about indulging in a rich, decadent dessert with this

cholesterol-free Chocolate Cheesecake. ItÂ’s a treat for your mind and

body. Rather than using heavy cream and cheese, this recipe contains

soymilk and tofu, which are made from high-protein soybeans that contain

all eight essential amino acids. Enjoy it knowing it's low in saturated

fat, high in polyunsaturated fat, and absolutely delicious!

 

Ingredients:

 

1 block of Silken Tofu (drained)

1 Graham Cracker Pie Crust

1 cup chocolate soymilk

1/3 cup cocoa powder

1/2 cup sugar

1 teaspoon vanilla extract

1/4 cup dark chocolate chips (optional)

 

Directions:

 

Cut block of tofu into small chunks and put into the blender.

Add soymilk, sugar, vanilla extract, and cocoa powder and blend well until

smooth. If you'd like, add chocolate chips.

Once all are combined, pour into the pie crust and bake for 35-60 minutes

in a preheated oven at 350º or until the top appears solid.

Chill for 1-2 hrs before serving. Garnish with soy whip or other non-dairy

whipped topping.

Health: Benefits of Cocoa

 

According to Dutch researchers, cocoa can lower blood pressure and risk of

heart disease by 50 percent. The 15-year study study, recently published

in Archives of Internal Medicine, examined cocoa's relationship to

cardiovascular health in 470 Dutch men aged 65 to 84 years. Men in the

group with the highest cocoa consumption were half as likely as the others

to die from cardiovascular disease. Their risk remained lower even when

considering other factors, such as weight, smoking habits, physical

activity levels, calorie intake and alcohol consumption. The men who

consumed more cocoa were also less likely to die of any cause.

 

The researchers concluded that it was not just the lower blood pressure

that corresponded to lower overall risk of death but credited antioxidants

and flavanoids found in cocoa. Flavanoids are a class of healthy

antioxidants found in plant-based foods. They boost the functioning of

cells, which lessens risks of heart attacks, cancer, and lung diseases.

Inspiration: Innovative Ideas

 

Suhas Gopinath, a life-long vegetarian, is proof that young people can

make global changes. At age 17, he became the youngest CEO in the world,

launching his own multi-national corporation. Gopinath dreamed of becoming

a vet as a kid, but at 14 he became fascinated by the Internet. His

interest started with the creation of his own web page but soon turned to

recently sat down with PETA to discuss his views on business, animal

rights, and what young people can do to revolutionize both.
