Cucumbers are actually classified as fruit, though they’re not often recognized as such because they are not very sweet. With a crisp, mild flavor, they’re reliable sources of vitamin C, vitamin K, and potassium. Cucumbers are great to eat raw and contain more nutrients than pickles. Transfer them into a large bowl and squeeze them dry; remove the liquid. Add vinegar, coconut milk, and onion. Finely add salt, pepper, and a pinch of sugar.
