Recipe: Green Tea Gingered Tofu

 

Spice up your meals with a touch of traditional Chinese culture by adding

green tea to your recipes! In addition to its pleasing flavor, Green Tea

is a great source of vitamin C and is loaded with healthy antioxidants.

Powerful nutrients found in plants-based foods, antioxidants have been

associated with cancer prevention and heart health.

 

Ingredients:

 

3 cups green tea, steeped, regular-strength

1 lb. extra-firm tofu, cut in 1 inch cubes

2 tsp. fresh ginger, grated or chopped finely

1/4 cup tamari soy sauce

1/4 cup cornstarch

1/2 cup water or cooled tea

1/4 cup peanuts, roasted, and unsalted

3-4 scallions, shredded (green parts only)

3 cups brown or basmati rice, cooked

 

Directions:

 

Bring tea to a light boil over the stove; add tofu and boil for ten

minutes over medium heat.

Scoop tofu onto a plate or bowl with a slotted spoon and remove all but 2

cups of tea from the saucepan.

Add ginger and soy sauce to saucepan; stir, and bring to a boil.

Mix cornstarch with water or cooled tea until smooth; pour slowly into the

saucepan, stirring. Continue to stir until the sauce thickens.

Lower heat to simmer, add peanuts and scallions, and cook, stirring, for

another minute. Remove from heat and carefully add tofu, stirring gently.

Serve over cooked rice.

Health: Green Tea Prolongs Life

 

A recent study published in the Journal of the American Medical

Association has found that people who regularly drink green tea live

longer. Researchers explain that the antioxidants found in green tea are

key to explaining the life-prolonging benefit.

 

The 11-year study examined data from more than 40,000 men and women in

northeastern Japan, a region where 80 percent of the population drinks

green tea and more than half drink three or more cups daily. Study

participants who drank five or more cups of green tea a day were found to

have 16 percent lower risk of death and heart

disease.
