Recipe: Sweet Stuffed Apples

 

As the old proverb says, " An apple a day keeps the doctor away! " Perhaps

this is

because apples contain essential, health-promoting nutrients, such as

vitamin C,

antioxidants, fiber, and potassium. Eating apples regularly has been shown

to lower

cholesterol, help with nerve cell protection, and aid digestion. You can

eat apples

in a variety of ways -- raw, baked, or mixed into your favorite recipes.

So be sure

to include plenty of apples into your diet this season!

 

Ingredients

 

2 cups soy or rice milk

3 whole cloves

1/2 tsp. ground cinnamon

1 Tbs. carob powder

2 tsp. vanilla extract

2-3 Tbs. lemon juice

6 Tbs. pure maple syrup

6 large baking apples

3/4 cup golden raisins

1/2 cup black raisins

1/3 cup pecans or other nut (optional)

 

Directions:

 

Combine soy/rice milk, cloves, cinnamon, carob powder, vanilla extract,

lemon juice,

maple syrup, and nuts (if desired) in a 9 " x13 " baking dish; stir well to

combine.

Wash and core the apples; put them into the baking dish and stuff with

raisins.

Sprinkle any remaining raisins around the bottom of the baking dish.

Spoon some of the sauce over the apples; cover with aluminum foil and bake in

preheated oven at 325 F for 1 hour (if apples are large, they may need 15

- 20

minutes longer).

Serve warm or chilled in bowls along with the sauce.

Health: Apple Cider Benefits

 

According to a recent Scottish study, apple cider may offer the same

health benefits

as eating apples. Past studies have recognized the various health benefits

of eating

apples, including cancer prevention, lower cholesterol, as well as heart

and lung

health.

 

The scientists at Glasgow University reveal that the health benefits of

both apples

and cider could be due to “phenolic antioxidants” which are thought to give

protection against strokes and cancer. Antioxidants are substances

naturally found

in fruits and vegetables and have long been recognized to protect cells

against

unstable molecules in the body. The researchers plan to conduct further

studies in

order to see how humans absorb the phenolic antioxidants from cider.
