Savory Pumpkin Quiche

Hi,

 

Just wanted to thank Jill for sending the Savory Pumpkin Quiche recipe. I was

able to veganize it and made it to take to a vegan potluck yesterday. It was

gone in no time! Everyone loved it. For anyone who's interested here are the

changes I made:

 

1.5 packages of Mori Nu extra firm silken tofu in place of the eggs and milk

 

approximately 1/4 cup milk (any savory liquid would work just as well though

this was not for flavor but just to help the mixture process in the food

processor)

 

1/2 cup Sungeria Soyfoods Feta Cheese in place of the Gruyeres Cheese

 

The rest was the same. It really turned out great. Thanx again for sending the

recipe.

Gayle, that makes me so happy! My kids really liked this and I'll make it again

for sure.

Maybe I'll even " veganize " it!

PS My favorite thing at dinner was my cousin's roasted root veggies, which she

marinated in

balsamic first. And the pecan pie.
