I was able to veganize it and made it to take to a vegan potluck yesterday. It was gone in no time! Everyone loved it. For anyone who's interested here are the changes I made: 1.5 packages of Mori Nu extra firm silken tofu in place of the eggs and milk approximately 1/4 cup milk (any savory liquid would work just as well though this was not for flavor but just to help the mixture process in the food processor) 1/2 cup Sungeria Soyfoods Feta Cheese in place of the Gruyeres Cheese The rest was the same.
