These are really good ideas. I usually cube up some extra firm tofu and throw

it in with some simmering sauces of various flavors and cook them. My daughter

used to love it plain and would not eat it with flavoring (crazy). With my son

I have come to the conclusion that he will not be as easy. I really love the

idea of making it into nuggets or mixing it with yougert.

I usually use 1/2 tofu and 1/2 ricotta in the bean and pasta slop.

Sometimes it is the texture that can cause little ones not to eat

it. I often freeze the tofu to give it a chewier texture. Also,

I'm sure you know that tofu takes on pretty much any flavor it is

mixed with. You can blend it with other fruits or yogurt to make a

smoothie or you can freeze it into popsicles too. You can also cut

it into slices and coat them with some corn meal or wheat germ, bake

them in the oven and you will have tofu nuggets - with some dipping

sauces, he may like those too. Just some suggestions. .. :-)
