We have since undergone a massive home remodel, including the kitchen. I took the info off the fridge, and I have NO idea where to find it. Sorry! But even though tofu, or the not so healthy meat subs SEEM like a good protein source, I have two comments about that. 1. The human body does NOT need anywhere near as much protein as the meat industry, dairy industry, and mainstream medical community would like us to believe. Especially important for women, but true for everyone--too much protein actually leeches calcium from the bones, causing osteoporosis. This is another myth shattered--that we need more and more calcium to avoid osteoporosis. That problem is much more a problem of protein overload than calcium deficiency! Of course, you won't hear that in the mainstream media. 2. Vegetable sources of protein are much better assimilated by the human body. You might try to locate information on vegan protein sources, and try and incorporate some of these foods into your child's diet, rather than relying on dairy or soy (or *shudder* meat subs with " artificials " in them!). There is also information available about just how much protein we actually NEED--and it's not what we were taught in school by the meat and dairy industry's colorful " food guide " posters! You might also want to share some of what you find out with your pediatrician, because this information is probably totally foreign to them, and it will help them deal with the next veggie parent! If your son is happy, healthy, and growing, he's FINE. You don't need charts and numbers to tell you that. HTH! Replacing the " whites " with whole grain alternatives will increase the protein and provide you with good carbs and fiber. Try whole wheat tortillas, brown rice, whole wheat and brown rice pastas. One of my favorite, quick weeknight dinners is small whole wheat shells mixed with either pasta sauce, beans, ricotta and mozzarella; or mixed with beans, tomato sauce, taco seasoning, cheddar. I find it a struggle to provide my son with enough protein he is only 2 and the Doctor will not allow him to eat nuts yet, and he HATES tofu. My son is so picky it makes it dificult to provide him with what he needs. Any advice is welcome. Sometimes it is the texture that can cause little ones not to eat it. I often freeze the tofu to give it a chewier texture. Also, I'm sure you know that tofu takes on pretty much any flavor it is mixed with. You can blend it with other fruits or yogurt to make a smoothie or you can freeze it into popsicles too. You can also cut it into slices and coat them with some corn meal or wheat germ, bake them in the oven and you will have tofu nuggets - with some dipping sauces, he may like those too. I asked because my 2 year old son likes scramble tofu, BBQ tofu, and sauteed tofu sometimes. However, he does not like it fried or firm tofu. Also, my sister introduced nuts to my son, and he is fine, loves them. In addition, The Vegetarian Mother and Baby Book: Completely Revised and Updated (Paperback)by Rose Elliot (Author) has some good information that you might find helpful.
