Thank you Marilyn! That is very helpful. Gabriel used to eat fruits and

veggies and loved avocado, but now the only things he really eats are pancakes,

bananas, pasta with soy meatballs, mac and cheeze made with nutritional yeast,

baked tofu and organic " natural " pop tart style pastries.

I'd probably lose the poptarts, :) but everything else sounds great!

I did get him to drink a smoothie the other day, so will try to do more of

those,

Smoothies are a GREAT way to get nutrition into a child! Abby doesn't drink

them yet, but probably soon. I hope you add lots of leafy greens, tofu, and

flaxseeds to them. :)

but in general, I just feel like he's not eating enough and certainly not

enough variety. I am a big " list " person, so I feel this need to have a chart

of what he should be eating so I can at least offer those things each day and

know that I'm trying.

Here's your " list " :)--at least some form of protein (tofu, seeds, nut

butters, beans), a couple of servings of veggies, and a couple of servings of

fruit every day. Also at least a couple of servings of a carb (whole grain),

and

a little bit of healthy fat (avocado, seeds, nuts). Others will probably have

more suggestions, but that's my " basics " . Oh--I consider a " serving " to be

what a child will eat in 15 minutes without tossing the entire thing on the

floor. Mommy Nutrition 101. :D

I haven't tried any nut butters yet, b/c I'm nervous about allergies.

I was too, so I started with almond butter. Macadamia is expensive, but

probably also less allergenic (and delicious!).

And he doesn't eat crackers, but I will work to introduce those.

Again I worried about wheat allergy/gluten intolerance, so I introduced

non-wheat crackers and cookies first. And with Abby, I DID notice a wheat

problem

when I introduced regular crackers. I am gluten intolerant, so no big

surprise there.

I do give him some of whatever we are eating, but he generally just throws

everything off his tray. And he will not allow us to feed him with a spoon at

all anymore, so non-finger foods are out.

I always HATED spoon feeding anyway. Never did it much. Just this week,

though, I made a great vegan rice pudding (the Old Fashoined Rice Pudding

recipe

from the PDQ--Pretty Darn Quick--Vegetarian Cookbook), and we did spoon feed

it to her, since she'd never had anything like that before. She LOVED it,

raisins and all! Abby throws SO MUCH FOOD. It drives me crazy, but at least

then

we know she's not interested! Either she wants more of another food we've

offered for that meal, or she's done.

Do you have any good muffin recipes you wouldn't mind sharing?

Off the top of my head--no. Sorry! What I do for muffins is cheat a bit. I

use a gluten free muffin mix from either The Cravings Place or Namaste. They

turn out EXCELLENT. I just add whatever nut butter, flavorings, seeds, fruit

bits, or anything else I, or one of the kids, wants, to the mix. We make

minimuffins--easier to handle and not so intimidating for a little kid. My boys

(8 & 9) love them with the tiny Enjoylife chocolate chips in them--they're

gluten, dairy, and soy free, and the tiny chips look so cute in those

minimuffins!

As to muffin recipes, I'd check out the Fatfree Vegan website

(_www.fatfreevegan.com)_ (http://www.fatfreevegan.com) . It's got TONS of

great recipes,

including for muffins. Here are some more great websites--you will never lack

for recipes--or nutrition information! :)

Wow Marilyn! This is all so incredibly helpful. I hadn't thought about adding

leafy greens to smoothies, guess I'd think it would taste bad, but I will try

that.

I appreciate knowing what you consider to be a serving. Gabriel seems to eat

only a few bites of anything, and throw the rest off the tray, but I've started

offering more than 3 meals a day, so at least he gets those few bites more

frequently. I will check out all of the sites you sent.

I'm trying to get the lbs on my vegan 16 month old son as well.? Lots of your

ideas have been great & I'm trying to incorporate smoothies.? My problem is what

to give them to him in?? I regular cup & deal with the berry mess?? I'd like to

give him his smoothie when he's not in the highchair so he can work at it b/n

meals.? I've tried cutting holes in sippy cups, but that was a flop when he

flipped it upside down.?

Any ideas from you smoothy makers who have successfully incorporated them into

your toddler's eating routine would be great.

Try freezing the smoothie. Stir it about every 20-30 minutes (if you

remember), until it can be eaten with a spoon.

If your son is healthy, happy, and otherwise meeting developmental milestones,

I would not worry about the weight.

I pour the smootie in a Nuby sippy cup and add a bit more rice milk, then shake

it up and he drinks it thru the sippy cup.
