It was about the best gift I ever got at something like that. It was great. When I went vegan I had a hard time finding something that really worked in the quesidillas. I found some soy cheeses that did 'okay' but never really good and eventually stopped using the quesidilla maker. But you just add your cheese and top with mushrooms, onions, olives, various peppers, etc. Whatever you want. Cover with a little more cheese or soy cheese. And other wrap. Then close the quesidella maker down until it is brown and crispy. Make sure to oil the fryer well. I used a vegan butter-type spread that gave it a lot of flavor. We'd also make mexican style rice to go with it. Fajitas are another good mexican type food. We do them sometimes with the MSF Steak-style strips, sometimes with a chicken type strip (i don't particularly like the MSF ones in that flavor), sometimes just vegetables. Again add various peppers, mushrooms, onion, squash, zuchinni etc. Whatever vegetables you like. You can buy fajita seasonings to sprinkle on them while you are sauteing your vegetables. You can add salsa, sour cream (I use tofutti), guacamole, etc whatever your preference. You can make tostadas. Get the flat crispy shells. Spread refried beans on them. Top with cheese or soy cheese. Lettuce, tomato, onion, sour cream, guacamole, and/or salsa. Whatever your preferences. You can make tacos with hard or soft shells. You can use refried beans (this is what I used in college when we had taco bar), black beans, ground veggie burger, whatever mix it up from one time to the next to find what you like) and add taco seasoning, then top with lettuce, tomato, onion, sour cream, guacamole, salsa etc. Looking for last minute shopping deals?
