We eat mostly vegan and so far she seems to prefer pretty simple fare but I am hoping to find some really special meals that she will love! I'm wondering if there are any preferred special meals that your kids get really excited about and that you would like to share. Guest guest Posted February 4, 2008 Report Share Posted February 4, 2008 Hi Shawna, I have two little ones (3.5 and 1.5). They love this dish that I make and ask for it! I usually make it once a week and make enough for two lunches. I give them some the first day, put the rest in the fridge and then give them the rest for another lunch several days later. I take these Earth's Best alphabet noodles (http://www.earthsbest.com/sesame_street/products/product/1784.php) and (after they are cooked of course) I mix them with just a little olive, a spoon of ground flax seed, raisins, kidney beans and carrots (soft or hard, depending on what I have - I cut them up really small). I mix it all together. They love it! And we always look at the noodles and discuss what letters they are. I usually take an extra plate and while they are eating I pull out noodles with a little spoon to make words. I spell out their names and other easy words. My kids (4yrs and 2yrs) like all the ingredients so hopefully it will go over well with them. We just had a little battle at dinner with my four year old, absolutely refusing to try one bite of a new dish. My husband thought we could do a meal plan and include her to try and develop new favorites. I really want to get to a point where they are excited to sit down to dinner.
