Guest guest Posted February 7, 2008 Report Share Posted February 7, 2008 Here's a few I can recommend: Fresh from the Vegetarian Slow Cooker is very good you can put it on overnight instead of during the day if you don't have time in the AM to toss the stuff in (though you can prep the night before, toss in crockpot in the am but I admit sometimes I don't feel up to doing it) put in fridge while you're at work or otherwise away from home and then just reheat for dinner (usually not in the crockpot, depending on your model). I also have " Better than Peanut Butter and Jelly " which has a mix of vegetarian and vegan (and the others are easily veaganizable for the most part). They're kid friendly, and some are rather quick. In the Veganomicon there is an appendix of the recipes, and there is a section that is 45min's or less (many don't take that long, either).
