Our library was selling off old copies and one I bouught had this simple recipe I decided to try. It takes no more than 15mins, not including the rice. I made mine in a rice cooker-a questionable bday gift from my mom that I have reservations about but appreciate its convenience. heat a few chili pepper flakes in olive oil (my son found it too hot and he doesn't mind a bit of heat so be careful here, depending on your child) add 2 diced up baby eggplants and saute for 5 mins add red/yellow peppers & mushrooms (mushies are not in the original recipe but my son loves them and peppers not so much) add onion (I didn't because my son doesn't like them nowadays) saute for 1 min add 2 tbsp each of brown sugar, tamari & vinegar (I didn't have tamari so I used Braggs) and saute 2 more mins add fresh basil (grocery store was out and I was too lazy to go elsewhere so I bought chives instead) and toss serve over rice (you could use room temperature leftovers) or rice noodles (they are super quick in a pinch) We adults really enjoyed it...my son not as much to be honest...but he doesn't like eggplant so it wasn't a big surprise. We are a family with both adults working outside the home (as well as inside) so I did appreciate the convenience of this recipe.
