I used to use the recipe from the McDougall Quick and Easy Cookbook, but now I just " fake it " . I actually made " chili macaroni " last night, but you could leave out the pasta and just use the chili ingredients. I used a bag of " veggie crumbles " , too, but that is optional as well. My original " recipe " (such as it is) is this: 2 jars spagetti sauce 3-4 cans of beans (I use a combination of pinto, kidney, and pink, but any beans would do) spices: chili powder, red pepper, cumin, black pepper, garlic powder, onion powder, oregano, and basil--all " to taste " Other optional ingredients: chopped onion, diced green bell pepper, corn kernels (white or yellow, canned or frozen), TVP or extra firm cubed tofu Obviously, chili can be made fast, and easy, with no real recipe. Guest guest Posted February 8, 2008 Report Share Posted February 8, 2008 chopped onion, garlic, green and/or mixed peppers,celery, carrot shreds or 'coins', TVP rehydrated with no-beef better than boullion, frozen (from my garden this past summer) parsley, oregano, basil, chili powder, cumin, paprika, cocoa powder, cinnamon, thyme, Beans (tonight it was black beans and kidney beans - we've done it with black eyed peas, too - pretty much any are interchangeable), canned crushed tomatoes, tomato paste, water and the appropriate amount of water and no-beef better than boullion. At least I think that's all of what I put in it. I sweat the onions and garlic with a pinch of kosher salt, till the onions are clear to brown on the edges, then add the peppers and celery, carrots and sweat for a few more minutes. Add tomatoes, tomato paste and bring almost to a boil. Add the rest of the ingredients, and cook, um...in my pot I reduce it by about a half inch or an inch depending on how much time I have, or how long I feel like waiting. LOL. I also was too hungry to wait for it to reduce as much as I liked, so I added a few scoops of some refried black beans that we had some leftover from yesterday. MMMM. I plan on freezing half of what's left for another time. Oh, I made hoe-cakes to go with it. Basically it's a cup of corn meal, pinch of salt or so, and 1 cup hot water. Mix till it's like a batter (you may need to add more water to the mix to keep it sort of like a thick batter - maybe just a tad thicker than pancake batter?) Fry in oil till golden, flip and repeat. I did add a pinch of paprika, too. Fairly fast, and quite yummy.
