here are some more favorites that i forgot about -

falafel balls

peas

any fruit

fruit smoothies (this is big with all of my kids - i put flax seed and vegan

omega 3s in it too)

Another thing I also forgot was this recipe I got from vegweb.com -

 

Vegan 'spaghetti o's'

(or whatever kind of tiny pasta shape you can find - usually I have stars or

alphabets, as I never have found just O's)

 

cook noodles according to package (for 2-3 servings for an adult, more if

it's just your child)

I tend to do about maybe 1c noodles

drain, then add 1 can of tomato soup (NOT diluted at all)

mix in some nutritional yeast for a cheesy taste

 

You can also cube up vegi burgers (I made the black bean burgers from

Veganomicon and tossed one of those in) or tofu. You can also add vegies if

you like. :)

I leave it plain (with the extra protien stuff) so it's more like what other

kids have had - so it's good to also pack in a lunchbox (in a thermos

anyway).
