look and taste of tomato sauce?

Dear Friends,

 

Can you let me know of a pasta sauce recipe that apes the look and taste of

tomato sauce?

 

My son has acid reflux and rather than treat with drugs we have opted for

diet modifications/raising bed etc. We are vegans anyway, and do miss pasta

sauce. Also if anyone knows of another sauce that looks like cream but doesn't

use soy milk (or obviously cows milk) as the creamer (for another dietary

problem). I was thinking of a white sauce made with artichoke and cashew nuts,

but have yet to find a good recipe.

 

We don't eat pasta all the time to all (if fact not much at all now(!), but

it would be nice once in a while)

 

Advice appreciated!!!

Hi Chana,

Our son has a contact sensitivity to tomato, his chin turns red if we

don't wipe it off right away sometimes. But, he loves it and sometimes

doesn't have the reaction, so we sometimes use tomato sauce, sometimes

not. I don't have a suggestion that is similar to tomato sauce, but

here are other sauces we've used on pasta: We are lacto-ovos, so we

just use butter with herbs and garlic for a sauce sometimes, but you

could use oil in place of the butter (like the traditional Italian

aglio-olio dish) and delete garlic or any herbs that might be a problem

for your son's tummy. We've also made primavera sauces - with fresh

veggies stir-fried, steamed, left-over/heated, whatever you have or have

energy for. :-) And we've used pureed soups - like a pumpkin soup or

sweet potato soup - but you could also just puree veggies . . . or buy

them canned and water down a little, even. And you can always do a

pesto or other herbed sauce like that. My aunt used to use chili as a

pasta sauce when we were kids, but that won't help your boy's acid

reflux - unless you just use the idea of a bean-based sauce and leave

out the spicy stuff. Best of luck!

Could easily sub. rice milk or plain oat milk or another non-soy/non-dairy

kind of milk (cashew/almond/quinoa whatever - I've not made my own other

than a very quick and lazy soymilk from tofu (yeah, back the other way

around LOL).

 

I guess the two searches I did were 'vegan white sauce' and 'vegan bechamel

sauce', both turned up many different hits.

I wonder is roasted red peppers, blended to make a sauce, would also have acid

in them? Wouldn't taste like tomatoes, but I once used some in lasagna when we

were short on tomato sauce. Is he able to consume sundried tomatoes?

Have you tried yellow (low acid) tomatoes?

There is a great recipe for a vegan alfredo style sauce in the

Uncheese cookbook. It isn't tomato sauce, but it is great on pasta!

It uses corn to give it the buttery, creamy taste. You just have to

blend it really well for the creamy texture you want. It calls for

low-fat vegan milk, but I have used cocunt milk also to give it an

extra boost of fat and richness.

 

Fettucine Alfonso (from Uncheese Cookbook by Joanne Stepaniak)

1.5 C fromzen corn kernels

1.5 C low fat, non-dairy (vegan) milk

2 T tahini (optional)

1 T onion granules

1 tsp salt

 

1 - 15.5oz can Great Northern beans, rinsed and drained well

 

1 lb fettucine

 

Thaw corn kernels by transferring to a mesh strainer and placing them

under hot, runing tap water. Place corn, milk, tahini, and

seasonings into blender and process until completely smooth. Pour

mixture into saucepan and add the beans. Warn over medium-low heat

undtil beans are heated through, stirring often.

 

Cook the pasta while you are heating the sauce. Add sauce to pasta

and toss until evenly coated - serve immediately and top with cracked

pepper.

I was looking through my vegetarian cookbooks for recipes. Obviously,

I can't reprint them without the authors' permission, but I found one

that may help you. Basically, you chop carrots, onions and garlic and

mix them with some olive oil. Then you roast them until softened

(about 45 minutes) and puree everthing in a food processor with some

vegetable broth, and voila, you have a healthful pasta sauce. You

could even add some roasted red peppers to make it look more like

tomato sauce and, of course, add seasonings. Another recipe for vegan

mac & cheese uses a combination of cooked butternut squash, white

miso, tahini and nutritional yeast to make the cheesy sauce. You

would just put everything in a blender, add some hot water and puree

until smooth, add some seasonings and serve over macaroni. For cream-

based sauces, ground almonds (without the skin) taste best in my

opinion, or you could make a white sauce by melting some vegan

margarine (i.e. Earth Balance) mix in some flour and stir until

smooth and then slowly add plain almond milk until you have a cream

sauce. You could then add seasonings, veggies, rice cheese, or

this is a really good recipe from vegan with a vengeance. our family

loves it!!

 

fettuccine alfreda

 

2 teaspoons olive oil

1 med. onion, chopped into big chunks

4 cloves garlic, chopped

1/2 cup water or veggie broth

2 teaspoons yellow mustard

1/2 cup pine nuts, toasted

2 teaspoons braggs

2 teaspoons chile powder

1 cup nutritional yeast

1/2 teaspoon salt

a few dashes of black pepper

 

*saute onion and garlic until tender. put in food processor or

blender

*add all other ingredients and blend away. it should be somewhat

smooth, but still a little grainy

*serve over fettuccine. it makes about 4 servings

I think I found this on this site some time ago. I have never tried

it but it should give you the look of tomato suace. Its title was

marinara without tomatoes.

 

Basic sauce

6 carrots & 1 small beet

OR 6 c. butternut squash, quartered

1 large onion, quartered

1 stalk celery, sliced

1 bay leaf

1 1/2 cup water

 

Flavor & Fun:

3 - 4 cloves garlic

1 onion, minced

1 - 2 t. olive or sesame oil

1 t. basil or thyme

1 t. oregano

1/4 cup parsley, minced

1 T. miso or tamari soy sauce*

2 heaping T. kuzu, dissolved

in 1/2 cup cool water

 

OPTIONAL, you can add sauteed mushrooms, or minced seitan or Yves

Ground Round -- depending on whether you're avoiding soy or not.

Use carrots and beet for a red sauce. For a delicate, sweeter orange

sauce try squash.

 

Place Basic Sauce ingredients in a pressure cooker. Bring to

pressure, then simmer 20 minutes, or pot-boil 30 minutes. Puree in

blender. Add water, if needed, for tomato sauce texture.

Saute garlic, onion and herbs for 5 minutes. Add optional seitan or

mushrooms and sautee 10 minutes more. Next, add sauce and bring to a

boil. Then cover and simmer 10 minutes to blend flavors. Season with

miso or tamari. Add kuzu, stirring until thick and shiny.

 

 

We enjoy this recipe using squash, tahini and walnuts to make a

sauce. You could probably substitute cashews for the walnuts - it

should be thicker andd creamier. Weput it on many types of pasta.

Anytime a recipe calls for Miso and I don't have any - I just leave

it out. The only thing I've ever had to adjust for is the salt.
