Hi all.

Mostly a lurker here, but I had a question. We are having some omni friends over

to teach

them how to make sushi and have dinner. We usually make our sushi with avocado,

carrots,

cucumber, that sort of thing.

I was hoping to have some more options available, and I was also wondering if

anyone had

some easy, kid-friendly recipes for other dishes to serve that would go with the

sushi.

I usually fry up some long strips of tofu in soy sauce to add to my

rolls. Very yummy if I can keep the kids from eating them first.

I was going to suggest something similar...heh. Breaded and fried or baked

tofu also works well in it

As does veggie cream cheese and asparagus with the tofu, even carrots.

I also sometime make garbanzo salad (can be adjusted to more adult tastes

and be made spicy, like spicy mock tuna rolls)

I've also done rolls with cukes and vegi cream cheese, or just cukes (kappa

maki)

 

I think for kids, my son like whatever we're having, but he tears the rolls

apart to eat them. Mostly he likes the rice and the nori, and the stuff on

the inside he likes separately I think you can do vegi dogs in them if some

kids are just not sure about it (cut into strips maybe with a veggie for

fun?) or do little vegi dog octopus' on a plate for them instead, and some

onigiri (the rice balls or triangles with just a bit of nori folded over on

one side) - or fancy ones with fillings inside (my son even loves red bean

paste, so for a dessert like one, you can add that, or some other fillings,

similar to the rolls)

 

Pretty much anything can be put into a roll...maybe even try some yellow

rice (just use turmeric) and/or parsley and you can make some of the fancy

looking colored rice rolls that might appeal to them, too.

You can serve edamame (boiled soybeans) lightly salted and soba

noodles with dipping sauce. Rice crackers are nice for a snack food.

Miso soup can also be bought in packages - just add hot water.

I have often made sushi with various items. Broccoli, green beans, hard

squash, tempeh, vegan ham, mango, pineapple.

Other dishes, seaweed salad, miso soup, sweet potatoes with sesame seeds

drizzled with agave or maple syrup, veg dumplings.

Not a recipe, but a vegetable and two product recommendations...

I suggest you try the Trader Joe's Birds Nests and Vegetable Tempura.

While they aren't the healthiest foods around, they are vegan, they

taste great, and they may fit your dinner theme. You could also serve

edaname (soy beans), a good source of vegetable protein. The Japanese

serve them as a snack in much the same way as we would do a bowl of

peanuts.

Alex loves vegetables tempura. we have also made a kid's sushi treat from

crisp rice cereal, dried fruit, and fruit leather. i'll have to check the

old hard drive for the recipe and photos though as we haven't done it in

quite a while...

If you google " fruit sushi " you will find lots of options.

 

Here is a great, kid friendly side. I use it as a starting point, rather than

an acutal recipe.

 

Soba Salad

 

2 packages (5 oz, 140 g each) soba noodles (you can substitute any noodles)

1 carrot, cut into 2-inch (5 cm) match sticks

4 dried shiitake mushrooms, soaked in warm (you can sub any mushroom)

water for 20 minutes, stems removed, thinly sliced

1 scallions, cut into 2-inch (5 cm) match sticks

1 small cucumber, halved, seeded, and cut into 2-inch

(5 cm) match sticks

1/4 cup (60 ml) daikon or radishes, cut into match sticks

 

For the dressing:

4 Tbs (60 ml) peanut oil

3 Tbs (45 ml) lemon juice

3 Tbs (45 ml) soy sauce

1 Tbs (15 ml) sesame oil

2 tsp (10 ml) grated fresh ginger

2 cloves garlic, finely chopped

 

Cook the noodles and carrot in boiling salted water according to the

package directions for the noodles. Drain and rinse with cold water.

Toss with the remaining vegetables in a large serving bowl. Whisk

together the ingredients for the dressing and pour over the noodles.

Toss until thoroughly blended. Serve chilled or at room temperature.

Serves 4 to 6.
