Was just wondering if anyone has some good packed lunch ideas? Such as sandwich fillers and snack ideas. I like mine with avocado, chives, hummus or other bean spread (with lots of garlic), and sometimes sprouts. I LOVe eating roasted veggie wraps out but can't get into them if I make them. Dips are good- veggies with hummus, spiced sour creams, etc.... I put it together with suggestions from others (mostly from this group). Most days my daughter takes a thermos of dinner leftovers, a big salad, or a veggie wrap on a whole grain tortilla. My family switched to being vegan about 3 months ago. We follow Dr. Fuhrman's eating plan and my oldest daughter who is nine is a patient of his. We started this as a health-related issue for my daughter, but the entire family follows it now and we all feel great. I also have a 7 year old daughter and an one year old son. I am always looking for ideas of what to pack for lunches. My 7 year old is extremely picky and is a challenge to pack for. I am also looking for ideas for the baby. He still breastfeeds often and I am hoping to start the weaning process. He will not eat much food, so any ideas is greatly appreciated. Looking forward to talking with everyone. Did you know that the World Health Association recommends breastfeeding for a minimum of two years? Many toddlers wean themselves when the time is right. We make a layered nacho dip that has a layer of refried beans (mixed w/ taco seasoning), layer of sour cream, layer of guacamole, diced tomatoes, green onions, chiles, and Monterey Jack cheese (ALL VEGAN items, of course). It is probably meant for a party dip, but we eat it with tortilla chips as a meal! ha ha This would go great in a cold lunch.
