veggie packed lunch ideas

Hi group,

 

Although my little girls school does do a veggie option for hot

dinners, I have decided to let her go packed lunch. Was just wondering

if anyone has some good packed lunch ideas? Such as sandwich fillers

and snack ideas. This would be a great help :)

Lily likes roll-ups with with soynut butter, chopped apples, and carrots. I

like mine with avocado, chives, hummus or other bean spread (with lots of

garlic), and sometimes sprouts.

I LOVe eating roasted veggie wraps out but can't get into them if I make them.

:) Dips are good- veggies with hummus, spiced sour creams, etc....

I have a list of (mostly) veggie packed lunch ideas that I would be happy to

send to you (or anyone one else). I put it together with suggestions from

others (mostly from this group).

 

Most days my daughter takes a thermos of dinner leftovers, a big salad, or a

veggie wrap on a whole grain tortilla.

Hello,

 

I am not sure if I already introduced myself yet or not. I am new to this

group. My family switched to being vegan about 3 months ago. We follow Dr.

Fuhrman's eating plan and my oldest daughter who is nine is a patient of his.

We started this as a health-related issue for my daughter, but the entire

family follows it now and we all feel great. I also have a 7 year old daughter

and an one year old son. I am always looking for ideas of what to pack for

lunches. My 7 year old is extremely picky and is a challenge to pack for. I

am also looking for ideas for the baby. He still breastfeeds often and I am

hoping to start the weaning process. He will not eat much food, so any

ideas is greatly appreciated.

 

Looking forward to talking with everyone. I am excited to be a part of this

group.

Hi Jodi and welcome,

 

At 7 month, solids are not really necessary; their main purpose is to add the

experience of solids so they are familiar when you child does need them. Did

you know that the World Health Association recommends breastfeeding for a

minimum of two years? Many toddlers wean themselves when the time is right.

My son loves pita bread triangles with hummus to spread on it.

She said that she has a 7 year old and a 1 year old. We don't know how old (in

months) the baby is.

Krissie -

We'll use the book " Vegan Lunch Box " when our son is ready. If you

haven't seen it, please do. It has 64 ratings on Amazon, all of them

5-star:

Not all of the items are healthy, of course, but they are generally

thrown in as treats to keep kids from feeling left out. The author

just wrote an update so you may want that one, but the first edition

is great.

I just thought of another idea for packed lunches.

 

We make a layered nacho dip that has a layer of refried beans (mixed w/ taco

seasoning), layer of sour cream, layer of guacamole, diced tomatoes, green

onions, chiles, and Monterey Jack cheese (ALL VEGAN items, of course).

 

It is probably meant for a party dip, but we eat it with tortilla chips as a

meal! ha ha

 

This would go great in a cold lunch. In fact, I'm packing some for my son's

lunch tomorrow with some tortilla chips.

I have been looking at this and I would love some ideas my daughter

is 13 and we are running out of ideas for things for her to eat at

lunch. If anyone could email me any ideas I would really appreciate
