Need help to decrease sugar in recipe

I found this recipe online for Pinto Bean Fudge (RecipeZaar). Wow, it

contains a LOT of sugar! I usually bake with no more than 1 cup of

sugar per recipe and I try to reduce that. Does anyone have any

ideas how to alter this recipe to significantly decrease the sugar

(and do away with synthetic sugar and stevia)? Or maybe you have a

different tried an true bean dessert or brownie or fudge? We do use

agave and maple syrup as well as vegan granulated sugar (but no

honey).

No Bake Pinto Bean Fudge #121114

Can you think of a better way to eat your beans then as dessert?

Another plus is not having to turn on that oven in the summer! This

is not a diet dessert...so eat sparingly.

48 squares

20 minutes 20 mins prep

1 cup pinto beans, cooked

 

3/4 cup cocoa powder

 

1/2 cup margarine, melted (Better Butter#117086)

 

1 tablespoon vanilla

 

2 lbs powdered sugar

 

1 lb sugar substitute (or equivalent amount)

 

4 ounces walnuts, chopped

 

1. Mash beans.

2. Mix well together all ingredients.

3. Butter a 9x13 inch pan and spread mixture.

4. Put in refrigerator and chill thoroughly.

5. Cut into squares.

6. * Make sure to read sugar subsitute package to get correct

measurement to equal 1 lbs of regular sugar.

That does seem extremely excessive. I see there are no reviews on that

recipe yet, maybe everyone else has had the same hesitation. Perhaps the

contributor meant cups instead of pounds -- in which case, it would

still be a huge amount! Is it possible to contact the contributor to

clarify?

I second date sugar. We use date sugar or agave nectar in anything calling for

sugar.

Plus, I bet things would work out o.k with a reduced amount (though I have never

ventured into fudge making- can't stand the waiting LOL! )
