I was trying to find an alternative to adding salt in the process. Do any of you have any ideas? I have never done this before, so anything could be of help! Thank you for your thoughts! Danielle. Guest guest Posted May 14, 2008 Report Share Posted May 14, 2008 I may be wrong but I think that salt is in there to either preserve the color or to stave off bacteria. I'm not sure. I had some links before, I'll have to check them - we have a larger garden this year, and we may have to can some stuff this year, though I think we'll probably freeze stuff instead. Good luck. I have no idea about salt alternatives. My grandma used to use salt when she canned some veggies, but no longer does it at all, as she's 87yrs old.
