I am very interested in starting to can veggies and things this

summer. I was trying to find an alternative to adding salt in the

process. Do any of you have any ideas? I have never done this before,

so anything could be of help! Thank you for your thoughts!

I may be wrong but I think that salt is in there to either preserve the

color or to stave off bacteria. I'm not sure. I had some links before, I'll

have to check them - we have a larger garden this year, and we may have to

can some stuff this year, though I think we'll probably freeze stuff

instead.

 

Good luck. I have no idea about salt alternatives. My grandma used to use

salt when she canned some veggies, but no longer does it at all, as she's

87yrs old.

supposedly has some changes that reflect new information about the dangers

of including salt, nitrates and so on in preserving food. i haven't

actually read it (it's on my wishlist), but based on one of the reviews on

the side (complaining about the " food police " ) it's probably what you're

looking for. :)
