Very impressive! http://blog.fatfreevegan.com/2007/09/vegan-omelette-for-one.html I used the Lite Silken Tofu (which comes in a 12 oz package) so I a bit more than doubled the recipe and there was enough for 4 of us. I can't believe I made this on a school morning, but my son who usually takes off at 7, was going in late (senior stuff - finishing up his senior project). Everyone liked it and my 13 year old daughter LOVED it! Oh, and for good measure (or because I'm crazy like this) I used 1 heaping tablespoon each of corn starch and egg replacer (potato starch) for the more than doubled recipe. It cooked up very well.
