Guest guest Posted June 2, 2008 Report Share Posted June 2, 2008 Hello All! My name is Lorena and I have been lurking for a few days. My family and I decided together to be vegan in March. We are doing well and my kids have very little complaints since they are getting used to eating tofu and all the goodies vegans enjoy. One area I definitely need help with is school lunches. Sure school is almost over but next year is right around the corner. We have been making faux tuna sandwiches and wraps for our kids as well as toasted tomato sandwiches and they are alright with that. However we are starting to miss variety. Guest guest Posted June 2, 2008 Report Share Posted June 2, 2008 I'm another newbie and I have 3 words for you: VEGAN LUNCH BOX ok maybe it's 2 words? anyway google that blog. get the cookbook. this lady is a goddess, she makes the most creative lunches for her son (many of them are easy though). She lives more or less in the middle of nowhere and still manages to do amazing things. I even give this book to meat-eating friends, some make the recipes, some adapt to their own styles, but all have found great tips for getting their kids to eat certain things they might not otherwise, and lots of great ideas for school lunches. There's even a recipe for vegan twinkies on there, which by the way I'm itching to try now that I finally got a twinkie making kit. (my husband says I'm not a vegetarian, but a " junkfoodian " and there is a nugget of truth there obvy). I am intersted in this thread as well. One thing that Lily likes hot or cold is mac-n-cheese with broc or chopped spinach. Sometimes I use raw spinach and sautee with garic. Guest guest Posted June 4, 2008 Report Share Posted June 4, 2008 Yes when my daughter was a little younger I used to make " mac & cheese " for her which was steamed zuchini & carrots then pureed with a little soy milk, a little soy cheese, and any other things i wanted to add (a little flax for instance) and she would always slam it down (yes, with a little ketchup too).
