I'm enjoying the meatless meals and I actually can see myself making this " trial period " a permanant change for my family. I want to expand what I can cook so that my kids will continue to eat vegetarian. Thanks ahead of time! It's so wonderful that you supported your daughter's decision, took her seriously, and saw the benefits of what she wanted to do. It is a great step for your family's health! I'm trying to steer my omni husband towards more vegan foods, plus I'm feeding six kids ages 19 mos.-21 years old here. Here are some books you might find helpful for quick and easy meal ideas, both cooked and raw vegan: McDougall's Quick and Easy Cookbook (mostly cooked vegan) by Dr. John McDougall (I use this one a LOT) Cookin' Easy With One Foot Out The Door (can't remember the author's name offhand--I just ordered this one from amazon.com after it was recommended to me in a " raw foods for families " class, but I believe it's a lot of cooked vegan, not mostly raw) Easy Raw Sensations by Frederic Patenaude (all raw, uses minimal equipment, no " fancy " ingredients) Thank God for Raw, Hallelujah Kids, and Recipes for HealThy Living, all by Julie Wandling (Christian perspective, mostly raw recipes, very family friendly) Raw Foods for Busy People by Jordan Maerin (simple, quick raw recipes using minimal equipment) Recipes for Life from God's Garden by Rhonda Malkmus (mostly raw, some cooked--great information about feeding kids, health reasons to transition, setting up the kitchen, and a lot more) Cooking by the Book by Marcella Lynch (cooked vegan--SDA perspective--she also has cooking videos available which are really nice--I have all of them) Newstart Lifestyle Cookbook by the Weimar Institute (cooked vegan--Seventh Day Adventist perspective--great nutritional information) Green for Life by Victoria Boutenko (GREAT information on why to eat more raw greens, and how to do so) I also got lots of easy raw recipes off the Hallelujah Acres website's recipe section (_www.hacres.com_ (http://www.hacres.com) ).
