I have used my Champion Juicer to make the frozen fruit icreams which my children love, but as they grow older, they want to venture out with new flavors. Guest guest Posted June 16, 2008 Report Share Posted June 16, 2008 i've never used an ice cream maker and i've had no problem living without one. the key is to stir the ice cream (or sorbet, or whatever) every hour or so while it is freezing. it's a bit of a hassle but better, i think, that consuming a new product. i make my ice creams from raw nut milks combined with coconut oil/water/milk. the coconut is really essential because of the fat content. fat is what makes an ice cream creamy and also prevents it from becoming very icy when you freeze it. since i've been using coconut i've never had a problem with ice creams becoming too hard or icy. a touch of alcohol also helps, especially with sorbets; alcohol doesn't freeze so it helps to maintain a better texture. i use fruits, extracts, nuts, honey or agave (sparingly), and carob/cacao and though i've often considered an ice cream maker, i've ultimately decided that it isn't essential so long as there's plenty of good fat and perhaps a tablespoon of alcohol to a quart. chandelle On Sun, Jun 15, 2008 at 1:28 PM, <admartin5 wrote: > I would like to start making my own nondairy, refined sugar-free " ice > cream " and was wondering what ice cream makers are great. Its small though and only makes a pint at a time. I used to make my own just by freezing in a bowl, then stirring, etc, but we decided to get an ice cream maker for the convenience - it takes about 20 minutes to make ice cream start to finish in this as long as the bowl is pre-frozen - we just keep the bowl in the freezer all the time which also helps the freezer run more efficiently (by being full). I also love the recipes in Vice Cream if you need recpe ideas. Guest guest Posted June 16, 2008 Report Share Posted June 16, 2008 Hi, I LOVE my Cuisinart 1 1/2 quart ice cream maker! I also LOVE the book Vice Cream by Jeff Rogers. The recipes are great and I've made some really yummy 'ice creams'! He uses raw cashews and maple syrup for most of the first half of the book. Then the second half has 'raw ice creams' using almond milk and dates with various fruit juices and such for flavorings. I like the Cuisinart because you can make 1 1/2 quarts at a time and you don't have to use any ice or salt or any of that and it's done in 25-30 minutes! I love being able to make my own ice creams whenever I want and I know what ingredients go into it! Now that's not to say that it's the best thing in the world to eat of course, but it's a nice treat for birthdays and other celebrations. I've also starting branching out to make my own recipes using the basic nuts/water and sweetener recipes from Jeff Rogers' book. Hope that helps! Happy Ice Creaming!! We tried experimenting with just cashew cream and it is good, but not the right texture. I make a quick raw cherry ice cream in my vitamix using raw cashew milk, dates, frozen cherries and just a spoonful of coconut oil. It comes out so creamy and mousse-like. I make a decadent quick ice cream out of a can of coconut milk, 4 ounces of rice milk (or other vegan milk), one cup of melted choc chips - just melt choc chips in half the coconut milk, and a tsp vanilla. Mix it all up - set in the fridge overnight, then put in the ice cream freezer for about 20 minutes. Sometimes, we eat the cold mixture as choc. mousse for dessert. Guest guest Posted June 18, 2008 Report Share Posted June 18, 2008 I have two recipes - one for the ice cream maker and one for a quick blender version: Both can be made as raw or you can substite - ie. if you are not on a raw diet, you can use plain cocoa powder instead of raw- or of course you can leave the cocoa out all together but something about cherries and chocolate - YUMMY!!! Black Forest Ice Cream 1 3/4 pounds organic cherries - pitted plus 1 cup chop pitted cherries (placed in freezer for about 45 minutes) 1 cup raw cashews (or cashew pieces) soaked for at least 2 hours 1/2 cup raw agave 1/4 teaspoon almond extract (optional) 1/2 cup raw cocoa powder Run the 1 3/4 pounds of cherries through a juicer to make 2 cups of juice (I have also made this by just blending the cherries in the vitamix) Compine cherry juice (or puree), cashews (drain from soaking water), agave and almond extract in blender until sily smooth. Add cocoa powder and blend again until incorporated. Place mixture in freezer for 45 minutes to chill - it will freeze better in the ice cream maker if it goes in cold. Pour the mixture into the ice cream maker and freeze according to manufacturer instructions. After about 20 minutes, pour the cherry pieces into ice cream maker - or you can wait until it is completely frozen, and fold the cherry pieces in by hand. Black Forext Cashew Milk Shake (Cherry Chocolate Cashew Milkshake) 2 medjool dates (no need to soak really) 1/4 cup Raw Cashews, soaked for at least 2 hours 1 Tbls Raw Cocao Powder 1 Tbls Coconut Oil (optional) 10 oz Frozen Cherries (pitted) I blend in sequence in the Vitamix, the dates, the cashews, and about 1/4 cup purified water - if you soak your dates, you could just use that water, but I do not use the cashew soak water. Blend until creamy/frothy, then add cocoa powder & Coconut Oil and blend again. I usually taste this milk to see if it is sweet enough - if not add another date. Then add the cherries and blend on high for about 30 sec or so until it is the consistency of a milkshake.
